PLAT DU JOUR : Syrupy Orange Sponge Cake
For Today’s Afternoon Tea:
Winter is
drawing to a close in the Southern hemisphere. I found some lovely oranges –
probably the last of this season – and decided to prepare a personal favourite
(I adore most varieties of citrus fruit). The orange infused sponge cake base
is made with the hot milk sponge method. This yields a light, airy and
flavourful sponge that absorbs the orange syrup well without sacrificing too
much of the airy sponge texture and becoming a soggy mess.
Strictly
speaking, the white chocolate decoration is not necessary, but it does break
the visual monotony.
