PLAT DU JOUR : Madras Style Curry Chicken
For Today’s Lunch:
Madras Style Curry Chicken with Pan-Fried Butternut Squash and Chinese Inspired Potato Salad
The winter is starting to make its presence felt and we
need to spice up the nature of lunch. Enter from the right: Madras style curry chicken!
The curry sauce is mildly aromatic and a little tangy
(from diced tomato, tomato puree & lemon juice), making it a good foil for
the inherent sweetness of pan-fried butternut squash chunks and garden peas.
The potato salad had – on a whim – some hoisin sauce, Chinese 5-spice and
chopped scallions added to enliven a staid old standby. It worked surprisingly
well.
All in all, I thought the curry tasted nice and the
other combinations complimented it successfully.
